Gastrologik

“For us, it was of course the food that was our focus, but it was through the overall experience that we want to stand out. Therefore, it was also important that we constantly develop our service and interior design, that there is a distinct thought and a common thread in everything.”

In 2011, Jacob Holmström and Anton Bjuhr started the restaurant Gastrologik in Stockholm. The theme was obvious: Locally grown ingredients and innovative dishes. Each dinner sitting would be a unique experience for the guest and would extend over 2, 5 hours, which placed high demands on the quality and execution of the food, but also on the chair itself and the sitting. Our Miss Holly peg chair was there from the beginning and the chairs are still standing, about 40,000 guests later. Nowadays also in the glory of two stars in the Michelin Guide.

Jonas Lindvall is behind the interior design for Gastrologik. In close collaboration with Jacob and Anton, he has created an interior that will harmonize with the distinct focus behind the duo's concept, where locally grown produce of the highest quality form the core value. An important factor when choosing chairs before the opening in 2011 was that they would be comfortable and withstand many hours of sitting, which was the result of both an innovative, tasteful and long tasting menu. Many chairs were tested before choosing Miss Holly the honorable task. We also delivered tables in different sizes, of which those in solid oak now go by the name Miss Tailor and, just like Miss Holly, are designed by Jonas Lindvall.
